I’m a big fan of the alberino bean. It is a bean that has a deep, rich color and a silky texture that is perfect for pasta and sauce. It’s not so crazy to say that this is my favorite albino bean. Its flavor can range from sweet to nutty and spicy, but the albino beans are always a welcomed addition to a meal.
Alberino beans have a slightly bitter flavor that is very pleasant. They’re a bit less than a full cup size in size and they’re not overly bitter. You might have noticed that the foods labeled “iodine-rich” on the bottle of iodine supplements in your pharmacy include more than just milk and dairy products. Most of these have added iodine, which is an essential nutrient for the thyroid, and is also found in eggs, cheese, and some vegetables.
A few weeks ago, I read that the average American consumes about 0.005 milligrams of iodine per day, which is only a tiny fraction of the recommended daily amount for healthy people. Many people that are thyroid-impaired and go without this nutrient are susceptible to thyroid issues, such as causing goiter (swollen thyroid gland).
Iodine is sometimes called a “trace mineral.” And it’s important to have it because it helps regulate the thyroid hormone levels. Although Iodine is an essential nutrient, it’s not recommended to consume iodine directly as it can cause iodine deficiency.
